Soak 400g saltfish in water. Boil for about 15-20 minutes, until soft. Drain, remove skin, de-fiber and put to one side. Fry diced tomatoes and pepper in the oil. Add saltfish and drained Ackee. Cover and simmer. Serve hot and enjoy.
