There are various soy sauces on the market, but Chinese soy sauce is the most commonly used in the Netherlands. This Chinese soy sauce is somewhat lighter in colour and taste, but somewhat saltier. What exactly is soy sauce?
Soy sauce is, as the name suggests, a sauce made from soy. It is made with fermented soybeans with wheat, water, salt and yeast. The original Chinese soy sauce is aged for a shorter period, which makes it lighter in colour and flavour. The dark Chinese soy sauce, on the other hand, is aged for a longer period. Molasses or caramel is also often added to this, which creates a dark, syrupy substance. This dark soy sauce is also less salty than the light soy sauce.
How do you use Chinese soy sauce?
The light version of Chinese soy sauce is mainly used as a seasoning or dipping sauce for all kinds of dishes and marinades. The dark Chinese soy sauce is mainly used to give dishes their color. It is also common to heat the dark soy sauce.
Other types of Chinese soy sauces
In addition to the light and dark variants of Chinese soy sauce, there are many more types of soy sauces from Chinese cuisine . For example, there is Mushroom soy sauce. This is soy sauce with mushroom extract. In this you have two flavors that differ quite a bit from each other, namely the light Mushroom variant and the dark Mushroom variant. Furthermore, you have Seafood soy sauce. This is a light soy sauce that is subtly flavored with sugar and herbs. This differs only slightly from the traditional Chinese soy sauce.
