Tacos with Chicken
Treat yourself to a tasty and easy chicken taco with Al Pastor seasoning, perfect for a weeknight. These tacos combine the rich, ready-made seasoning with tender chicken and fresh toppings. You'll have a delicious Mexican taco on the table in less than half an hour!
Ingredients
- White corn tortillas
- Chicken thighs (200 grams)
- 1/2 cup chicken broth
- Juice of 1 lime
- 1 tbsp tomato puree
- 2 cloves garlic , finely chopped
- Sazon Taco al Pastor spices (to taste)
- 1 small red onion , finely chopped
- 1 avocado , cut into pieces
- 1 tomato , diced
- Mozzarella/grated cheese

- Mix the chicken thighs with the Taco al Pastor seasoning, minced garlic and lime juice. Let this marinate for at least 10 minutes for extra flavour, but longer is fine.
- Heat a small layer of oil in a hot pan. Fry the chicken breasts for 5 minutes on each side until golden brown and cooked through.
- Remove the chicken breasts from the pan and shred them with two forks into small pieces. Set aside.
- In the same pan, add a tablespoon of tomato puree and stir it briefly into the oil until the puree darkens slightly. Add the chicken stock and stir well. Return the shredded chicken to the pan and fry for a few minutes until the sauce has thickened slightly and the chicken has absorbed the flavours.
- Warm the corn tortillas in a dry pan, about 30 seconds on each side, until they are warm and lightly toasted. This will help them become pliable and flavourful without adding oil.
- Fill each tortilla with the chicken, avocado, red onion, diced tomatoes and a little mozzarella.
- Sprinkle the tacos with extra lime juice and hot sauce if desired and enjoy the tasty chicken tacos!
