Gyu Don, also known as Beef Bowl, is one of the most popular donburi dishes. Gyu Don, a delicious dish of thinly sliced beef and onions, gently cooked in a heart-warming broth flavored with soy sauce and mirin. It is a quick and easy meal that is perfect for any day of the week.
Ingredients:
- 1 cup cooked Japanese rice
- 200g thinly sliced beef
- ½ onion, cut into half rings
- 120ml dashi stock
- 3 tablespoons soy sauce
- 2 tablespoons mirin
- 2 tablespoons sake
- Salt and pepper
Optional:
- Spring onion
- Beni Shoga (pickled ginger)

- Cook 1 cup Japanese rice. Check out our guide to choosing the best type of rice for your dish here and our guide to cooking rice here .
- Cut the onion into thin strips.
- Cut the spring onion diagonally into thin strips and set aside.
- Remove the Beef slices from the packaging. Do you prefer to use fresh beef from the butcher? Then ask for ribeye or beef neck. It helps to freeze the ribeye and cut it into thin slices while semi-frozen.
- Put the pan on the stove, but don't turn the heat on yet. Then add the Sake, Mirin, soy sauce and dashi. Mix it all together and then add the onions.
- Bring everything to the boil with the lid on the pan.
- Remove any foam and fat and cook for 3-4 minutes.
- Divide the cooked rice between 2 large bowls. Then sprinkle some of the sauce over the rice.
- Scoop the meat on top of the rice. Add extra sauce to taste and garnish the Gyudon with pickled red ginger.
