Yuzu is a yellow Japanese citrus fruit. This unpasteurized yuzu juice retains all the properties and the taste of fresh yuzus.
Bando Foods is a small family owned company based in the Tokushima department of Shikoku Island. The company grows Japanese yuzu, sudachi and yuko citrus fruits on a surface of more than 7700m2. The fruits grow between 300 and 400 meters above the sea level. Its annual production is about 25 tons. It is one of the few companies in Japan to be certified organic for Japanese citrus fruits, from fruit growing to production.
Flavor : Yuzu has a subtle and complex flavour, inbetween tangerine and citron.
Use : Yuzu juice can be used instead of lemon in both savory and sweet preparations: sorbet, fruit salads, and cocktails. You can also use it in your sauces for fish and seafood.
