Lye water is used in Japanese ramen or Chinese egg noodles. By adding this lye water, the noodle becomes yellower and more resilient. Lye water is not completely harmless to use. It is concentrated and can cause skin burns if misused. Lye water should not be used undiluted and should certainly be kept out of the reach of children . Lye water has a very long shelf life outside the refrigerator.
