Blue corn flour makes tortillas and tamales with an intense flavor and dark hue. Naturelo blue masa harina is made from an old variety of blue maize. The seeds are dried, boiled and then soaked in mineral-rich lime water before being ground into a fine flour. The flour is very pale blue-grey.
Use Naturelo blue masa harina in a wide variety of authentic Mexican dishes - such as tortillas, tacos, gorditas and tamales. The cornmeal is also a great ingredient in gluten-free cooking. Combine with xanthan gum or guar gum to make gluten-free bread, pie crusts and sponge cakes.
