Unagi Kabayaki sauce is very similar to teriyaki sauce, both sauces are a combination ofsoy sauce,mirin(sweet Japanese rice wine) which is sweetened with sugar. With Teriyaki, ginger and/or garlic are often added for extra flavor, which is not done with dishes made with Unagi Kabayaki sauce. The Kabayaki sauce has a sweet taste with salt from the soy sauce.
