Indian spice mix. Panch Puran, or Panch Phoron, Paanch Phoran is a colorful blend of five whole spices widely used in East Indian cuisine, more specifically Bengali and Nepalese. Heera Panch Puran consists of whole cumin, mustard seeds, fenugreek, nigella and fennel seeds.
Unlike many other spice blends, panch phoran is always used whole and never ground. This mixture of five Indian spices is delicious as a rub for meat, added to Indian stews, sprinkled over vegetables or used for preserving vegetables, as well as an aromatic seasoning for bread for baking.
