Indian Vindaloo Curry Recipe
Ingredients for 4 persons:
- 1 packet spice paste for Indian vindaloo curry
- 450 g chicken fillet, cut into pieces
- 1 tbsp vegetable oil
- 1 large onion, finely chopped
- ½ cup (110 ml) tomato puree or diced tomatoes
- ½ cup (75 ml) water
- mint leaves as garnish (optional)
Preparation:
- Heat the oil in a pan over medium heat and stir-fry the spice paste and onion for 2 minutes.
- Add the meat and stir fry for 3 minutes. Add the tomato puree or tomato pieces and the water and bring to the boil.
- Then let it simmer at medium temperature for about 15 minutes until it is done. Stir occasionally. Garnish and serve hot with rice or naan bread.
