A sweet vinegar, with a deep umami flavor and delicious smoked notes that last a long time in the mouth. This vinegar can be used for preparing meat dishes such as stir-fried chicken and aubergines, as a base for salad dressings or for marinating vegetables such as sunomono. Tosazu literally means vinegar from Tosa. Located in Shikoku, the Tosa region, the actual Kochi region, was known for its excellent bonito. Therefore, tosazu vinegar is mainly made from dashi, a Japanese broth made from bonito and kombu seaweed. Tosazu also contains soy sauce and mirin. This vinegar has the property of having strong smoked notes.
