Pu-erh tea is available in two varieties:
Sheng Pu-erh (Raw Pu-erh): This is the unfermented form of pu-erh tea. The tea leaves are picked, dried and compressed into cakes or discs. Over time, the leaves undergo natural fermentation and aging, resulting in complex flavors that are often earthy, grassy and floral. Sheng pu-erh is often considered valuable because it improves in flavor with age.
Shou Pu-erh (Baked Pu-erh or Ripe Pu-erh): This is the fermented form of pu-erh tea. The fermentation process is artificially accelerated and can last from several months to several years, depending on the desired flavor profile. Shou pu-erh typically has a deeper, richer flavor with notes of earth, wood and sometimes even mushrooms.
