This soy sauce is made by a producer specialized in koji. It is a sweet soy sauce and it is very rich in umami.
Founded in 1906 in Koriyama, Horaiya Honten takes pride in its knowledge regarding koji, a key ingredient present in each product sold by the company. It has been over 100 years since the company founded by Yutaro Yaginuma makes its own koji, using traditional fermentation methods that have been improved through the years.
Flavor: A flavor less salty, sweet, very rich in umami.
Use: It goes very well with sashimi and sushi but it will also be delicious simply poured on tofu or rice. Thanks to its creamy texture and its sweet taste you can realize really gourmet tuna or chicken marinades or sauces and salads dressings.
