This exceptional dashi jelly is the combination of aged black rice vinegar and dashi-traditional broth extracted from kombu and dried bonito.
Taste : Rich in natural glutamate, it has a unique deep umami taste, long and round on the palate.
Use : This jelly can be used for sauces and soups. It also goes perfectly with grilled mackerel, a poached egg, rice or meat.

Originally from Kagoshima, Mr. Nakahara, our dried bonito supplier, worked as a consultant in Tokyo before his life reached a turning point. After hearing about the slowdown of dried bonito in his hometown, Mr. Nakahara to quit his job and use his experience as a consultant to take over the family business Nakahara Suisan, in the midst of a crisis. The knowledge he gained and his passion for the authentic taste of dashi led him to develop new products related to fishermen from the area.
Mr. Nakahara has made major contributions to the production of dried bonito in Makurazaki, earning him the title of spokesperson for dried bonito. Mr Nakahara still strives to spread the flavors and dashi around the world.
