Ingredients:
- 1 cup Japanese cooked rice
- 280g chicken thigh, thinly sliced
- 2-3 eggs, roughly beaten
- 1 onion, thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 2 tablespoons sugar
- 120ml dashi (Japanese broth)
- 1 tablespoon Sake

- Spring onion
- Shichimi Togarashi
- Sansho pepper

- Cook 1 cup of Japanese rice. Check out our guide here to choose the best type of rice for your dish, and here for the guide on how to cook rice.
- Slice the chicken diagonally into thin pieces.
- Marinate the chicken in Sake.
- In a pan, combine soy sauce, mirin, and dashi. Then bring to a boil.
- Add chicken and onions to the pan and let it simmer for 5 minutes.
- Whisk the eggs in a bowl. The egg white and yolk don't need to be completely dissolved, you can have large pieces of white and yellow visible.
- Gradually pour the roughly beaten eggs over the chicken and onions.
- Cover the pan and let it cook for another 5 minutes or until the eggs are set.
- Serve over a bowl of cooked rice and enjoy!
